Merlot, Cabernet Sauvignon and Cabernet Franc bring their different typicities to the wine.
Merlot provides body and roundness, Cabernet Sauvignon provides richness and structure (tannins), and Cabernet Franc brings finesse and suppleness.
70% Merlot – 20% Cabernet Sauvignon – 10% Cabernet Franc
Red wine is a macerated wineThat's why we're going to leave it in contact the pulp, the skin of the berries as well as the seeds. During alcoholic fermentation, we will carry out reassemblies in order to extract aromas and structure. This alcoholic fermentation lasts on average 15 days.
In new and one-year-old oak barrels, for a period of 12 months.
Best enjoyed within 10 years. Serving temperature approximately 16°C. For younger vintages, 14-15°C.
A garnet robe with pinkish highlights, a deep, brilliant, and clear color. The nose expresses a powerful and complex bouquet, evoking red and black fruits (prune, cherry), but also vanilla, toast, and smoky notes. The palate is full-bodied and round, with elegant tannins, and a finish of fruit and oak.
Porcini mushrooms Bordelaise, roast rabbit, quail stuffed with grapes and foie gras, beef pie, veal sweetbreads Marengo, lamb skewers Provençal style, grilled beef ribs with vine shoots.
