Bordeaux Superior 2014/2015/2016

Merlot, Cabernet Sauvignon and Cabernet Franc bring to the wine their different characteristics.Merlot gives body and roundness, Cabernet Sauvignon wealth and structure (tannin) and Cabernet Franc will bring finesse and flexibility.

 

Grapes Varieties:

70  %  Merlot  –   20  %  Cabernet  Sauvignon  –  10 % Cabernet Franc

Harvest & Vinification :

The red wine is a maceration wine, so we will leave in contact the pulp, the skin of the berries as well as the pips. During the alcoholic fermentation, we will practice pumping over to extract aromas and structures.

This alcoholic fermentation lasts on average 3 weeks.

Aging:

Assembled 50% high in oak barrels for 12 months, the remaining 50% are elaborated like the classic vintage.

Consumption:

To taste in 7 years. Operating temperature around 16 ° C. For the youngest vintages 14-15 ° C.

Tasting

Nice garnet color, with pink, brilliant and limpid reflections. The nose is frank, with aromas of red fruits (currants, redcurrants) and toasty notes. Full-bodied, supple and balanced, with silky tannins and fruity notes on the finish.

Food Pairing

Bordelaise lamprey, beef steak with pepper sauce, braised veal paupiettes, navarin of lamb, hot roast pork, roast duck, tarragon chicken, roasted quail, meat ravioli.
